The original recipe for these cookies came from a Pillsbury magazine style cookie cookbook I bought in the early 90’s. My changes over the years includes making these Gluten Free, Nut Free and reducing the sugar. Apple based cookies are perfect for fall. These are hardy, easy to make and can stand up to being in a school lunch box. These No Bake Cookies are a great time saver. You can just plop them out onto some parchment (or wax) paper on the counter before you go to bed. In the morning, you have a full batch of cooled and dried cookies!
Gluten Free No Bake Cookies
The only grain in this cookie recipe is oats. Gluten free oats are easy to buy. Most major grocery stores carry Bob’s Red Mill brand. You can use either “Quick Cooking Oats” or “Regular Rolled Oats”. Regular Rolled Oats will give the cookies a hardier texture.
Picking Your Apples
I’ve used this recipe with just about every kind of apple out there. If you buy your standard, non-organic apple, please peel it. You wouldn’t want to contaminate your cookies with all of the chemicals that are put onto the apples to keep them “fresh”.
A Granny Smith apple will give these No Bake Cookies a bit of a tart flavor kick. Standard Red Delicious apples are usually not crisp enough to leave much for texture, and aren’t my first choice. I really like a good Braeburn, Gala or Pink Lady apple. These varieties aren’t overly sweet, but they are nice and crisp.
