While I was in the kitchen making my Chocolate Apple Oatmeal No Bake Cookies, I thought it would be fun to try these out as a Paleo No Bake Cookie. So, I pulled out my Coconut Oil, Honey and Unsweetened Coconut Flakes and got busy.
I held some blind taste tests with the family, and the Paleo version of these no bake cookies were the unanimous favorite! The chocolate flavor actually comes forward more in this version. Plus, it pairs well with the honey.
Making Paleo No Bake Chocolate Cookies
To make these cookies completely Dairy Free, I substituted in Coconut Oil for the Butter. I was pleasantly surprised that this really did not change the texture of the finished product. 🙂
In order to make these cookies Grain Free, I replaced the oats in the original recipe with Unsweetened Flaked Coconut. I think you could easily use the small, shredded unsweetened coconut, but the texture will be completely different.
Finally, to make these cookies fit the Paleo sugar guidelines, I replaced the regular sugar with honey. Since honey is sweeter than sugar, I reduced the overall amount from 1/2 to 1/3 of a cup. Also, by adding in a liquid sweetener, the boiling time needs to be increased slightly, to reduce down a little bit more of the liquid.
